Erin Go Bragh! Okay, maybe it is a day early, but with a last name of Shannon, it is NEVER to early to celebrate St. Patrick’s Day. We’ve been in full-on Irish mode for a few days now. Jim has made several batches of Guinness cupcakes with Bailey’s Irish Cream frosting. I made a Dubliner Cheese Tart for a get-together with friends last night. I have a double-batch of Shepherd’s Pie ready to warm in the oven for tonight. I have the filling for Steak and Guinness Pie done and waiting for its pastry crust for tomorrow’s dinner. The house is awash in green (and has been for a few weeks now). We have ALL been wearing our favorite green shirts and tees. We celebrate the luck of the Irish year round, but definitely let our exuberance show in March. Bring on the green beer! Sláinte!

I am really hoping the snow is over with here. It got rained mostly away while we were gone. It would be nice if it would stay gone!
Our backyard is still covered in snow, but the piles out front are slowly disappearing. I did see that the forecast calls for at least another inch of snow this week. Ah, spring.
But I was just watching a robin hop across our lawn not more than five minutes ago, so there is hope!!

Yep. It’s this luscious stew (without the potatoes or cooked carrots) topped with puff pastry. So traditionally British Isles and SO good.

Sounds yummy! We’ve been celebrating all weekend, too, and probably won’t end up doing much on the actual day tomorrow! I have an Irish last name, too, but we’re not really all that Irish. We love the food, though!
The funny thing is that I’m not Irish at all. I just married someone with an extremely Irish last name. However, I love the food and have always admired the people for their resilience, their history, and their culture. So, I’ve definitely adopted this holiday as my own.
